First cook the veggies in pan with a healthy oil like Olivia oil.
I usually start with the asparagus because that takes a little longer than the other veggies. Then I add the onions, green peppers, and mushrooms. I let that cook for about 5 minutes. The last thing I do is add the eggs. Being that i'm in competiton mode, I only use one whole egg and the rest is egg whites. Add 3-4 eggs. I let this cook until the eggs are done.
This meal isn't very high in fat because it's protein and veggies. If you don't use olivia oil or if you use more than one whole egg, that will add up to be more fat.
When I'm not in competition mode, I will have to try this with cheese. You seems to alway make eggs taste the best.
