When i'm in competition mode, I can't have carbs at nights. So, I eat eggs for dinner sometimes when I want something quick.
 
Asparagus
Eggs
mushrooms
Green peppers
Onions

 First cook the veggies in a pan with a healthy oil like Olivia oil.  I usually start with the asparagus because that takes a little longer than the other veggies.  Then I add the ioions, green peppers, and mushrooms.  I let that cook for about 5 minutes.  The last thing I do is add the eggs.  Being that I'm uin competition mode, I only use one whole egg and the rest is egg whites.  I add 3-4 eggs.  I let this cook until the eggs are done.

perhaps.  I'm not a spicy person but i'm sure many would love that.

Mmmm that sounds really good... I quite often do this for lunch, except I mix all the ingredients together first, fry onion in olive oil, then pour the mixture in. That way the veggies aren't too overcooked. Tastes great cold too!
